In Japanese, “KUMO” means “cloud” — pure, white, and seemingly weightless, yet filled with life and energy. Carrying this dream that “fell from the sky into a bowl,” we bring the delicate flavors and heartfelt craftsmanship of Japan across the sea to the dining tables of Hong Kong.
True excellence begins with an uncompromising pursuit of quality. KUMO is supervised by “Takano,” the legendary Tokyo ramen restaurant and long-time Michelin Bib Gourmand recipient. We inherit the meticulous standards of Japanese artisans who approach every ingredient with passion and precision.
The soul of KUMO lies in its eight-hour “White Miracle.” Using premium chicken from Niigata and Hakata Jidori from Fukuoka, enriched with collagen from Yamagata, our broth is carefully simmered at a constant 95°C to extract every drop of essence. Through a unique aeration technique, the broth is finished with a fine cloud-like foam that drifts gently on the surface — silky, rich, and soothing on the palate. Paired with our signature noodles, made from a blend of wheat and buckwheat flour and aged to perfection, each strand captures the broth’s deep flavor in every bite.
